Garden-to-table: Easy Summer Tomato Salad Recipe

I’ve been enjoying growing a few things to eat in the garden this year. Lots of fresh herbs, some wild strawberries, beans and a collection of tomatoes.

The tomatoes have been ready a little earlier than usual, so I made this easy summer tomato salad recipe with chopped capers, olive oil, lemon and plenty of fresh mint, finished with sea salt and lots of freshly ground black pepper.

Easy summer tomato salad recipe


You’ll need:

  • Ripe tomatoes

  • Chopped capers

  • Juice of ½ lemon

  • A drizzle of olive oil

  • Fresh mint

  • Sea salt and freshly ground black pepper


Chop the tomatoes and add the capers and fresh mint. Squeeze over the lemon juice, drizzle with olive oil and season generously. Give everything a good toss and leave for a few minutes so the tomatoes release their juices and the flavours come together.

This summer tomato salad would be lovely served alongside grilled fish or a tabbouleh salad (pictured above), or as part of a summer BBQ spread.
